Cauliflower “Couscous”

Cilantro, the only thing growing somewhat well in my garden

I need to eat more vegetables. Going zero-waste certainly forced me to clean up my diet—I cut the POP (processed and over-packaged) “food”—but I do love sugar and I can buy that in bulk where I live 😉

My older daughter first made this cauliflower dish last year, almost to the day and she allowed me to steal her recipe (which I changed very slightly). MK also turned me on to spaghetti squash noodles and zucchini noodles. I don’t even miss the carbs! (And I love carbs…)

This dish reminds me a bit of dolma filling, but made with grated cauliflower rather than rice. It’s a delicious way to sneak more vegetables into your peeps.

This cauliflower may not look perfectly fresh but it tasted delicious

Ingredients

Directions

1. For this post, I decided to use a cheese grater to shred my cauliflower. You can also use a food processor, pulsing with the blade attachment until you have rendered small granules.

2. Over medium heat, saute the onion and cook for about 5 minutes or until softened. Add the garlic. Cook and stir for about a minute. Add the cauliflower, cinnamon and salt. Cook and stir for 10-15 minutes or until tender.

3. Stir in the pine nuts, raisins, cilantro, pepper and lemon juice. Stir for about a minute. Serve.
